I noticed these bananas sitting in a corner of my kitchen – super ripe. I got a little excited, that meant its time to try my new Banana Bread Recipe!
Ingredients:
11/2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
3/4 cup sugar
1 egg + 1 egg white
1/2 cup plain yogurt
1/4 cup vegetable oil
1 tsp vanilla essence
1 cup mashed ripe bananas (about 3 of them)
1 cup Hershey Chocolate Chip (substitute according to taste with berries, walnuts, etc.)
Pinch of salt
Directions:
- Preheat oven to 350 degrees and spray a 9 X 5 inch loaf pan
- In a bowl, sift together flour, baking soda and baking powder
- In another bowl, blend sugar, egg, egg white, yogurt, oil and vanilla essence
- Mash bananas, add all other ingredients
- Pour batter in the prepared pan
- Bake in oven for 1 hour or until a tester inserted in the centre of the loaf comes out clean
